Necessary amount of crude InuGB-V3 to convert 570 g L⁻¹ sucrose within 24 h. The transfructosylation and hydrolysis of the substrate sucrose using different amounts of the crude enzyme were analyzed and are shown as stacked data. The crude enzyme (1,500–54,000 U L⁻¹) was added to prewarmed solutions of 570 g L⁻¹ sucrose in 25 mM sodium acetate buffer (pH 4.6) supplemented with 1 mM CaCl₂.
