Relationship between ammonia production and total amino acids. Ammonia was produced by E. coli DH10B from four food by-products and six media containing amino acids. E. coli strains were initially grown overnight in M9-yeast extract, then the cells were washed with sterile water and inoculated into 2 mL of pretreated food by-products or semisynthesized medium to a final OD600 of 0.5. After incubation at 37 °C for 26.5 h with shaking, the concentrations of ammonia in the supernatants were measured. The data of ammonia concentration are represented as the mean values (n = 3), and total amino acid concentration in the medium was determined at n = 1
