Time-course analysis of geniposide (closed circle) bioconversion into genipin (closed square) by rBGLa. The enzyme solution containing 0.5 μg/mL rBGLa was reacted with 0.5 mM geniposide in 25 mM sodium phosphate buffer (pH 6.0) at 45 °C. The reaction samples were withdrawn at regular intervals for 4 h and analyzed by HPLC
